This season is all about deeper flavours, warmer plates and the dishes our guests have been asking to see again.
Our Winter 2026 menu celebrates the harmony of French technique and Japanese influence, bringing together returning favourites, exciting new creations and seasonal ingredients that capture the essence of winter.
Returning Favourites
Some dishes never stay away for long.
Back by popular request, Le Canard de l’Orangerais returns to the menu. Our signature duck breast is cured in shio koji and juniper berry before being served with delicate textures of parsnip and finished with a classic bigarade sauce.
Also making its return this winter is Des Parisiens en Orient, our beloved Parisian-style gnocchi. Made from delicate pâte à choux and finished with fioretto, mushroom XO butter and a whisper of aonori, it remains one of the season’s most comforting dishes.
New This Winter
Joining the menu this season is Le Cochon Normand à Kyoto, a dish that perfectly reflects the spirit of Fleur de Mizu.
Le Cochon Normand à Kyoto is a dish close to our hearts. Twice-baked pork belly glazed in shōga no tare is paired with crisp Kanzi apple, matcha oil and a bright ume & date chutney — bringing Normandy and Kyoto together on one plate.
Our share plate selection has also grown with the addition of French Baked Camembert, served warm with shio kombu, cranberry chutney, beni shōga and crisp croutons.
Fresh oysters are now available individually, giving guests the flexibility to enjoy just one or several alongside a glass of wine or a seasonal cocktail.
To complement the new menu, we’re also introducing Lumière d’Hiver — our newest signature cocktail. Crafted with homemade quince shrub, Japanese sake and shōchū, this silky sour is fresh, bright and unmistakably winter.
A Sweet Finish
Winter wouldn’t be complete without dessert.
Our new Le Soufflé des Demoiselles Tatin reimagines the classic French tarte tatin as a warm caramel soufflé, served with vanilla crisps and ice cream.
Alongside it, Mandarinier Crémeux celebrates one of winter’s brightest seasonal fruits with baked cheesecake layered with mandarin compote and gel, creating a finish that is both refreshing and elegant.
