Sake Pairing Notes

Junmai-shu Urakasumi
A classic and well-rounded sake with gentle umami and a smooth finish. Complements the richness of foie gras while balancing the acidity of raspberry vinegar.

Urakasumi Junmai Ginjo 12
Light, aromatic, and low in alcohol (12%), this sake brings subtle fruit notes and a clean, crisp character that enhances the delicacy of seared scallops and creamy cauliflower purée.

Urakasumi Junmai Ginjo Zen
Elegant and refined with a delicate floral aroma and silky texture. The perfect match for the richness of lobster thermidor, adding harmony and finesse.

Urakasumi Yamadanishiki Junmai Daiginjo
Brewed with premium Yamadanishiki rice, this sake is luxurious and complex with deep umami and graceful finish—an ideal pairing for bold and savory dishes like braised beef short rib.
