To celebrate our 1st Anniversary, we present a 5-course French tasting menu, Each course paired with a unique Japanese sake experience.
The evening opens with a bold Namagenshu from Naotora (by Endo Brewery), a nod to deep-rooted tradition that echoes the classical French foundations of our cuisine. The journey then continues with sakes from the Denshin range by Ippongi Brewery, whose refined expressions are shaped by heritage and guided by innovation, a spirit that reflects Fleur de Mizu’s philosophy.

Discover the Heart ofIppongi Sake
Ippongi Brewery, founded in 1902 in the mountains of Fukui Prefecture, is celebrated for crafting sake of purity, elegance, and precision. Using the soft underground waters of Mount Hakusan and guided by a philosophy of balance and clarity, Ippongi has built a legacy of timeless sake-making.
Their acclaimed Denshin range, meaning “reaching your heart” represents a new expression of that legacy, one that embraces
refinement through innovation. Each label evokes a feeling or season, offering a more modern expression of emotion, purity, and precision in sake.

🍶 Sake Selection & Pairing Notes
Naotora Namagenshu Junmai Ginjo
Unfiltered and unpasteurized, this bold sake, rooted in ancestral tradition, bursts with freshness and layered umami. Its vibrant character beautifully complements the smokiness of salmon and lobster, brightened by cucumber and dill.
Denshin Rin Junmai Daiginjo (Rin = “air of the brewery”)
Pristine and graceful with notes of white peach and lychee. Like the winter air around the brewery, it brings refined clarity to the richness of duck liver and truffle.
Denshin Ine Junmai (Ine = “rice field”)
Bright and juicy with notes of apricot and green apple, this sake offers a ‘rich yet refreshing’ profile that enhances the savoury depth of Chicken Chasseur and scallop mousse. Crafted from two prized rice varieties, it evokes a field of ripening rice ears gently swaying in the autumn breeze.
Denshin Yuki Junmai Ginjo (Yuki = “snow”)
Soft and pure, with hints of cherry and vanilla. Brewed from snowmelt water, its clean elegance mirrors the oceanic citrus of the saffron bouillabaisse.
Ippongi Ginkoubai Umeshu
Elegant and gently sweet, this Ippongi Junmai sake-based plum liqueur offers a perfect balance of luscious fruit and refined acidity. A decadent match for the praline cream and toasted almond of our Paris-Brest.
