Our Culinary Philosophy

At Fleur de Mizu, we take pride in harmonising the rich, nuanced flavours of French and Japanese cuisine through the precision and elegance of traditional French culinary techniques. This French–Japanese fusion approach allows us to create dishes that feel both refined and distinctive, each one reflecting the unique harmony of these two culinary traditions.

Head Chef

Young Choi

Born in Tokyo and raised in South Korea, Young moved at 16yr’s old to San Francisco to study hospitality at the famous Culinary Institute of America. He began working as an apprentice at renowned San Fransisco restaurants Twenty Five Lusk (2 Michelin stars) and Boulevard (3 Michelin stars). After his acceptance to Le Cordon Bleu in Sydney, Young moved to Australia and trained to be not only professional a Chef, but an expert in French cuisine.

During his time in Sydney he has worked in some of the cities most recognised dinner establishments, Marque (3 hats) and Bentley (3 hats). In 2011, Young became Head Chef at Sous Le Soleil in Roseville where he performed for 12 years before opening Fleur De Mizu.

Maitre d’Hotel

Etienne Fromentier

Born in Provence, Etienne grew up in a family well rooted in the hospitality industry. Son of a chef, grandson of a “charcutier”, great grandson of the housekeeper of the State Prosecutor and great great grandson of a Maitre D’, it was not surprise when he wanted to pursue a career as a waiter when he was only eleven. 

With a passion for both education and service Etienne joined the Hospitality school Lesdiguières of Grenoble and subsequently the Hospitality School of Thonon Les Bains, both placed in the top 3 French Hospitality Schools.
He completed his Bachelor in Hospitality in 2014 with an internship as an assistant manager in a 3 star hotel-restaurant of Drome Provencale.

Constantly striving to achieve his best, Etienne gained insightful experience whilst working as a waiter at Le Chabichou (2 Michelin stars) and as a receptionist at the Hotel Paradores in Spain. 

In 2015, looking for new experiences, he decided to move to Australia where he join the team at Sous le Soleil in Roseville as maitre d’ and head sommelier for 9 years, before embarking on a new chapter and opening Fleur De Mizu, alongside Young, in 2024.
